Cacao Pancakes with Berries and Coconut

Ingredients

  • 1 banana, mashed
  • 1 egg
  • 30g gluten free oats
  • 1 tsp. Lucy Bee Cacao Powder/Lucy Bee Drinking Chocolate
  • Sprinkle of Lucy Bee Cinnamon Powder
  • 1 tsp. Lucy Bee Coconut Oil
  • FOR THE SAUCE TOPPING:
  • 20g Lucy Bee Coconut Oil, melted
  • 20g Lucy Bee Cacao Powder/Lucy Bee Drinking Chocolate
  • 1/2 tsp. vanilla essence
  • 1 tsp. honey or maple syrup
  • Sprinkle of desiccated coconut and berries, to serve - we've used blackberries and raspberries

Method

  1. Mix the pancake ingredients together in a bowl.
  2. Melt the Lucy Bee Coconut Oil in a frying pan then add enough mixture to the pan to make a small pancake.
  3. Fry for 2 minutes then flip to cook the other side.
  4. FOR THE SAUCE TOPPING:
  5. Add all ingredients to a saucepan and gently heat and stir together, before pouring over the pancakes.
  6. Sprinkle desiccated coconut over and top with your favourite berries - we've used blueberries and raspberries
