Classic Tomato Soup Lucy Bee Style

Ingredients

  • 2 sticks of celery, sliced
  • 2 carrots, diced
  • 1 red onion, chopped
  • 600g organic chopped tomatoes (tinned is fine)
  • 180g Greek yoghurt
  • 500ml vegetable stock
  • 1 tbsp. Lucy Bee Coconut Oil
  • Lucy Bee Himalayan Salt and Lucy Bee Whole Black Peppercorns, ground, to season
  • 2 - 3 tsp. honey (optional)

Method

  1. Sauté the celery, carrot and onion in Lucy Bee Coconut Oil for 10 minutes or until soft.
  2. In a heavy based saucepan, add the chopped tomatoes, Greek yoghurt and vegetable stock. Stir together and warm through.
  3. Add the sautéed vegetables to the tomato mixture and heat for a further 5-10 minutes, on a low heat. Season and add the honey, if using. Blend in a food processor until smooth.
  4. Serve immediately of store in an airtight container in the fridge.
