Halloween Refined Sugar Free Frosting

  • 100g cashews, soaked overnight or hot water for 2 hours
  • juice of ½ lemon (about 2 tbsp.)
  • 2-4 tbsp. honey or maple syrup
  • 1 small cooked beetroot or 1 tsp. powdered beetroot
  • 40g Lucy Bee Coconut Oil, melted


  1. Drain the cashew nuts.
  2. Add all the ingredients to a food processor and blend until smooth this may take 5 minutes or more depending on the power of your blender.
  3. Once smooth, spread the frosting over the cakes and use a fork for a rough finish.
  4. Leave in a cool place for the frosting to firm up a little.
  5. Decorate scarily before serving.
  6. This frosting is ideal to add to any cupcake recipe.
