Overnight Festive Chia Pudding

  • 50g chia seeds
  • 30g coconut yoghurt
  • 200ml Lucy Bee Coconut Milk
  • ½ tsp. Lucy Bee Cinnamon Powder
  • 1 tsp. ground nutmeg
  • 1/4 tsp. ground ginger
  • Seeds from 3 cardamom pods, blitzed
  • TOPPINGS, choose from:
  • Roasted hazelnuts
  • Desiccated coconut
  • Almond flakes
  • Manuka honey with cranberries


  1. Add the chia seeds, coconut yoghurt and Lucy Bee Coconut Milk to a small bowl. Stir in the spices and cardamom seeds then pour into two glasses and leave to set in the fridge overnight.
  2. Serve with your favourite topping.
