Pancakes with Buckwheat Flour and Lucy Bee

  • 50g buckwheat flour
  • 50g gluten free plain flour
  • 1 large egg
  • 250ml Lucy Bee Coconut Milk
  • 20g Lucy Bee Coconut Oil, melted, plus a little extra for frying
  • Greek yoghurt or soya for a lactose / dairy free alternative
  • 1 banana
  • 1 tsp. milled flaxseed
  • 1 tsp. cacao nibs


  1. Put the flour, egg and Lucy Bee Coconut Milk into a mixing bowl. Using a balloon whisk, mix the ingredients together ensuring no lumps.
  2. Add the melted Lucy Bee Coconut Oil and whisk together.
  3. Heat a little Lucy Bee Coconut Oil in a small frying pan. When the pan is hot, pour in enough batter to make a thin pancake.
  4. Cook on one side until lightly browned then flip the pancake over and cook the other side.
  5. Serve with yoghurt, banana, milled flax seed and cacao nibs.
