Plum Puddings with Almonds and Golden Syrup

Ingredients

  • 100g Lucy Bee Coconut Oil, melted
  • 100g Lucy Bee Coconut Sugar
  • 2 eggs
  • ½ tsp. almond essence
  • 100g gluten free self raising flour
  • 50g ground almonds
  • 240g diced Victoria plums
  • 80g golden syrup

Method

  1. Preheat the oven to 180 C, 350 F, gas mark 4.
  2. In a mixing bowl, mix together the Lucy Bee Coconut Oil and Coconut Sugar, using an electric whisk.
  3. Add the eggs and almond essence.
  4. Fold in the flour and ground almonds and mix well.
  5. Place 30g of the plum and about 1 tsp. of the syrup in the bottom of eight 200ml oven proof pudding basins.
  6. Pour 80g of the sponge mixture over the plums and syrup.
  7. Bake for about 15 minutes until firm to touch.
  8. Turn out and serve – or they will keep in the basins until you are ready to eat.
