Red Pepper Fries Make a Great Snack

Ingredients

  • 1 red pepper, cut into slices/fries
  • 1 egg, beaten
  • 30g Lucy Bee Coconut Flour
  • 30g grated cheese
  • A pinch of Lucy Bee Himalayan Salt and Lucy Bee Whole Black Peppercorns, ground
  • 1 tbsp, Lucy Bee Coconut Oil, melted

Method

  1. Preheat the oven to 180C, 350F, gas mark 4.
  2. Using 2 bowls and a baking tray, arrange in order – the first with the egg, the second with coconut flour, cheese and seasoning mixed together, then lastly the baking tray.
  3. Dip each pepper slice into the egg, then roll into the flour mix and place onto the baking tray.
  4. Drizzle Lucy Bee Coconut Oil over and bake for 18-20 minutes or until golden and crispy.
