Unrefined coconut oil belongs to a group of fats known as saturated fats.
Within this group, there are different types of saturated fat and coconut oil, due to its structure is known as a medium-chain fatty acid (MCFA). It is predominantly (approximately 48%) made up of lauric acid, which is also found in breast milk.
This saturated fat has as a smoke point of approximately 176C and is non-toxic when heated.
It is suitable for most cooking types (as a substitute for processed oils) including frying, roasting, baking or using it as a spread. At Lucy Bee, one of our favourite ways to use it is with our scrambled eggs - delicious!
Since it is naturally lactose free, it makes a wonderful alternative to butter in any recipe.
