Banana and Walnut Muffins - Gluten and Lactose Free

  • 50g Lucy Bee Coconut Oil
  • 75g Lucy Bee Coconut Sugar
  • 2 eggs
  • 225g gluten free plain flour
  • 2tsp (10/15g) gluten free baking powder
  • 4 or 5 ripe bananas
  • Small handful of walnuts, broken into pieces


  1. Preheat oven to 180 C, 350 F, gas mark 4.
  2. Place all the ingredients into a mixing bowl, use an electric whisk to mix together until smooth. Add the walnuts to the mixture and stir in.
  3. Bake in preheated oven for 25 to 30 minutes or until muffins spring back when lightly tapped. Makes approximately 8 muffins.
