Chocolate Cookies for the Whole Family

Ingredients

  • 250g gluten free oats
  • 60g almonds
  • 50g desiccated coconut
  • 5 medjool dates
  • 2 tbsp. Lucy Bee Coconut Oil, melted
  • 1 tbsp. milled flaxseeds
  • 100ml maple syrup
  • 1/2 tsp. Lucy Bee Cinnamon Powder
  • 1 tsp. vanilla extract
  • 60g cacao nibs
  • A pinch of Lucy Bee Himalayan Salt

Method

  1. Preheat the oven to 170C, 325F, gas mark 3.
  2. Place the oats, almonds desiccated coconut and dates in to a blender and pulse until it makes a rough flour.
  3. Add in rest of the ingredients except the cacao nibs, and stir together.
  4. Add the cacao nibs and mix in well - you may find it easier to mix with your hands.
  5. Take a handful and roll out and flatten to make a cookie shape.
  6. Place on an oiled baking tray and bake for 15 mins.
