Home-made Chocolate Truffles with Chia Seeds

  • 3 tbsp. Greek yoghurt
  • 1 tbsp. chia seeds
  • 1 tsp. vanilla essence or honey (optional)
  • 1 avocado, mashed
  • 2 tbsp. Lucy Bee Coconut Oil, melted
  • 1 tbsp. Lucy Bee Cacao Powder/Lucy Bee Drinking Chocolate (plus extra for dusting)


  1. Mix the Greek yoghurt, chia seeds and vanilla essence together and leave to set in the fridge for 1 hour to thicken.
  2. Once ready, mix in your avocado along with the Lucy Bee Coconut Oil and Lucy Bee Cacao Powder/Lucy Bee Drinking Chocolate using an electric whisk (you can also add a teaspoon of honey here if you wish).
  3. Carefully make 8/10 ball shapes using two spoons and roll in a bowl of Lucy Bee Cacao Powder for dusting. Roll each ball around in the bowl until covered.
  4. Set in the fridge for a further 1 hour then enjoy! Keep refrigerated.
